peach and proscuitto salad

"recipes" (i use that term loosely here) don't come much easier than this. when we're feeling the need for a lighter option to work into our routine, a salad is always a safe bet. 

normally, i kind of hate salad, so my favorites usually involve adding some fresh fruit (be it peaches, strawberries, or apples) for some added sweetness to make it palatable. toss in some proscuitto as well and you have a nice sweet-and-savory thing happening among all that arugula. this salad in particular is a favorite of mine in july - when the peaches and tomatoes are at their peak!

arugula
fresh peach, sliced
prosciutto, shredded
cherry tomatoes, halved
goat cheese, crumbled
dressing of choice (you could do a balsamic based dressing, but i actually like poppyseed)

toss the first 5 ingredients together in a bowl, and drizzle with your desired dressing!
